GLUTEN, A TOPIC WE HEAR MORE EVERY DAY...

Let's start by defining what gluten is. It is nothing more than a protein found in some grains, such as wheat, barley and rye. This protein is what gives elasticity and fluffiness to bread, for example, and to other baked goods such as cakes, cookies, etc. However, for some people, gluten can be harmful to their health.


But what does it cause?


Celiac disease and gluten intolerance is a condition of the immune system, where the lining of the small intestine is attacked and damaged, making it difficult to absorb essential nutrients.


Gluten intolerance can cause a variety of symptoms, including diarrhea, abdominal pain, fatigue, weight loss and skin rashes, and can also lead to long-term health problems such as osteoporosis and anemia.


Although gluten intolerance and celiac disease are separate medical conditions, both require the elimination of gluten from the diet to prevent symptoms and damage to the small intestine. Fortunately, there are many gluten-free alternatives available, including breads for those who are fans of bread, pasta, and other baked goods.
